Yes, I havenβt substack-ed since March. And yes, the rumours are true - I have no excuse.
Lifeβs just been busyyy. But Iβm back and will be sending substacks whenever I feel like it - versus trying to stick to a set day per week etc etc. Ok? Great. Glad weβre aligned.
Snack of the week: Rice Krispie bars. They always hit.
Cookbook of the week: Italian Coastal by Amber Guinness - a stunner filled with authentic recipes from along the Tyrrhenian Sea.
Kitchen piece of the week: Honestly nothing, because I canβt find ANYTHING. We moved house last month and I have yet to fully unpack + organise anything, itβs driving me up the walls. Send prayers.
Moving onto the good stuff:
Sparkling Tomato Limeade
I discovered this delish drink last year after making Very Good Drinksβ Tomato Margaritas for our cookbook club. The following morning I had leftover tomato syrup, lime juice, and a raging hangover. I always crave salty/savoury when Iβm hungover - and combining the two with some soda water was the absolute CURE. Iβve been down bad for it ever since, and one glass is never ever enough.
Heads up: the tomato syrup requires an overnight rest on your countertop - so anticipate prepping the day before.
Ingredients:
Salted tomato syrup
200g cherry tomatoes
200g caster sugar
8g salt (I used Maldon) 2% of 400g = 8g)
(You can reduce these quantities + use any weight - just ensure itβs equal parts tomato to sugar & 2% salt. I normally batch this amount so I can make a few drinks)
Tomato limeade -
2 oz fresh lime juice
2-2.5 oz salted tomato syrup - depending on how sweet you want it
150ml soda water
Ice
Tajin for rim
Cherry tomatoes to garnish
How to:
Start by making your tomato syrup: measure out your ingredients, halve your cherry tomatoes, and add to a jar with your sugar. Give it a few stirs and let it rest out at room temp on your countertop overnight to macerate and get all juicy βnβ cute.
Give your tomatoes and sugar a good stir in the morning. The sugar may have sunk to the bottom overnight but a few good stirs with the now juicy tomatoes will dissolve it fully.
Strain and stir in your salt until it has dissolved. Store in the fridge and use within a week.
Once that is all done - itβs time to make some tomato limeade!
If you love tajin, rim a tall glass and fill it with ice.
Add your lime juice, 2-2.5oz of tomato syrup and soda water. Stir very well. Garnish with cherry tomatoes on a cocktail pick.
