Just made this and WOW I was shocked by how good it was, I think this is the first time I batch-prepped a soup and wanted to eat half the portions immediately lol. Bc I'm vegetarian I used better than buillon seasoned vegetable base for the broth and it was definitely the way to go bc that stuff is phenomenal. I love how this soup is bright and fresh but still perfectly warm and hearty for winter

Wow thank you so much for letting me know - I love hearing this, you’ve made my whole day!! Top tip for avoiding mushy leftover batches is to keep pasta pretty al dents and separate the soup from the rest, not ideal but keeps everything from going super mushy. That’s how I’ve gotten the best second, third, fourth potions!

Yes! I've used cavolo nero before and it makes it the most stunning, deep green. Definitely taste and season as you go as it can make it slightly more bitter - so you might need less lemon juice.
